Comal
Seafront Latin American cooking with a raw bar of local fish, set above one of the Corridor's few swimmable bays.
Comal is the signature restaurant of Chileno Bay Resort & Residences, an Auberge Collection property, and one of the most complete expressions of contemporary Mexican cooking on the Tourist Corridor. It opened with the resort in 2017, set above Chileno Beach with open views across the Sea of Cortez.
The kitchen takes regional Mexican flavours and traditional dishes and reworks them with a light, inventive touch, drawing on local organic produce and seafood from the Sea of Cortez. Signatures include braised short rib with mole and a cacao broth, ceviche and crudo from the raw bar, and vegetarian doraditas made with hibiscus flower.
The recognition has followed. Comal is recommended in the Michelin Guide, was named among OpenTable’s top hotel restaurants in Mexico for 2026, and appears on La Liste’s ranking of the world’s best restaurants.
What to expect
The restaurant spreads across three levels of indoor-outdoor space designed by Los Angeles studio Gulla Jonsdottir, with rattan chairs suspended from a high ceiling, white stone walls, fire pits and a tequila display that appears to float above the bar. By day the mood is bright and upbeat; at night it turns candlelit and romantic, so for dinner for two it is worth requesting a table nearest the water.
The raw bar sits at the centre of the room, serving oysters, clams, ceviches and tiraditos. The bar pours an extensive collection of artisanal tequila and mezcal, and an aperitivo hour in the early evening is a good way to catch the light on the bay. Comal also serves an open-air, market-style breakfast.
