El Farallón
Ocean-to-table seafood served on tiers cut into the Pedregal cliffs just above the Pacific surf, with a champagne terrace.
El Farallón is carved into the cliffs at Waldorf Astoria Los Cabos Pedregal, with the Pacific breaking on the rocks below. The resort calls it the most celebrated dining experience in Cabo San Lucas, and the setting alone makes the case: tables sit among the natural rock, open to the sky, with the ocean filling the view.
This is a sea-to-table restaurant in the most literal sense. Executive chef Gustavo Pinet builds the dinner menu around the day’s catch from local fishermen, so what appears on the plate depends on what came in that morning. The kitchen is open-air, and the experience is as much about the drama of the place as the precision of the cooking.
Because Pedregal sits on the Pacific side of Land’s End, the restaurant faces the sunset, and after dark the sky above the cliffs is famously clear for stargazing.
What to expect
Seafood leads, prepared simply enough to let the quality of the fish speak. Before or after dinner, the Champagne Terrace pours a rotating collection of around 20 champagnes, by the glass, by the bottle or as a three-flight tasting. Its Savor the Sea experience pairs caviar, shellfish and Baja seafood with champagne as the sun drops into the ocean.
For the most private table, El Farallón by the Sea sets a single sand-side table for up to four guests, reached by candlelit steps, with its own seasonal menu.
