Árbol is the evening restaurant at Las Ventanas al Paraíso, A Rosewood Resort, and it offers something unusual in Los Cabos: serious Indian and pan-Asian cooking with a Baja coastline as its pantry. The resort describes the style as Asian coastal, and the Michelin Guide, which lists Árbol in its 2026 Mexico selection, singles out the kitchen’s command of a large menu.

Indian specialties are the backbone, supported by charcoal-grilled meat and seafood, wok dishes and a raw bar of oysters, sushi and sashimi. Michelin’s inspectors point to the Punjabi fish masala, made with the day’s catch in a gently spiced tomato and cashew sauce and served with pilaf, pickles and tandoor-baked naan.

The atmosphere matches the cooking. Lantern-lit branches glow above blond wood tables on a stone terrace, and the indoor-outdoor room has a theatrical, celebratory feel.

What to expect

The kitchen works across an Indian tandoor, an Asian wok and the seafood raw bar, so a meal can range from curries and tikka to sashimi and Wagyu. A dedicated sake sommelier offers pairings and guided tastings, and the wine list is extensive.

Two experiences stand out. Omakase del Mar, offered seasonally from November to May, is a private tasting for a small group built around Baja bluefin tuna prepared nose to tail, with bespoke sake pairings. The Sunken Table Experience is the resort’s grand romantic gesture, with champagne, fireworks and a bouquet of 250 roses.
