One to watch
Nodo at Viceroy Los Cabos
The reopened Viceroy's new Italian market: espresso at breakfast, market lunches and a full Baja-meets-Italy dinner by the water mirrors.
Viceroy Los Cabos, the white, sculptural resort on the San José del Cabo beach, reopened in late September 2026 after work that restored its famous water mirrors. It came back with two new venues. The first is Nodo, an Italian market and all-day restaurant led by Executive Chef Salvatore Molina.
What to expect
Nodo changes through the day: espresso and pastries in the morning, market-style plates and light Mediterranean dishes at lunch, and full restaurant service at night. The kitchen builds on Baja California Sur seafood and produce, and there’s a gourmet market to shop, with cooking and mixology sessions planned.
The resort’s second new venue is a 24-seat hidden speakeasy with no printed menu, built around rare gins and single-cask whiskies.
Why it matters
San José del Cabo’s beachfront needed an easy, high-quality Italian option that works for breakfast as well as dinner. A refreshed Viceroy is also a strong reason to look again at one of the most architecturally striking hotels in Los Cabos.
Our view
We’ll be back once the kitchen has had a season to settle. Early signs are good.
