Silán at Park Hyatt Cabo del Sol
Park Hyatt's signature restaurant brings Levantine and North African cooking to Baja seafood and produce, with a private wine cellar.
Park Hyatt Cabo del Sol opened in December 2025. Its signature restaurant, Silán, has been the last major piece to arrive. While it was being finished, the resort served a preview of the menu in the evenings at its Costamar Beach Club.
What to expect
Silán is built around Levantine cooking with North African and Middle Eastern influences, made with Baja ingredients under Executive Chef Miguel Gómez. Preview dishes have included hummus, labneh, grilled Cornish hen, a smoked beef kebab and baklava. It serves dinner only, with a private wine cellar and its own cocktail programme.
Why it matters
Nobody else in Los Cabos is cooking this way at this level. Together with Zuma at Ánima Village, Silán makes Cabo del Sol one of the most interesting dining addresses on the Corridor.
