The Cabo 100 / Private Service
La Cava Wine Room at Las Ventanas
The resort's wine room, bookable for private dinners, within a culinary programme that includes underground-cooked barbacoa with mezcal.
Below the whitewashed terraces of Las Ventanas al Paraíso, one of the Tourist Corridor’s most celebrated resorts, lies a room built for a very particular kind of evening. La Cava is the resort’s wine cellar, holding thousands of bottles at a steady cellar temperature of around 16°C, and within it sits a richly decorated private dining room where a small party can share a multi-course dinner surrounded by the collection.
It belongs on this list because it marries two of Las Ventanas’ great strengths. The resort’s wine program, led by Director of Wines Geneviève Rioux, is widely recognised, and its kitchen, under Executive Chef Victor Palma, has a deep feel for Mexican and coastal flavours. La Cava is where the two meet most intimately, with pairings designed to introduce guests to unfamiliar varietals as much as to pour famous names.
The signature format is the Immersive Cava Experience, a communal and interactive dinner developed with Chef Palma that explores how flavours, textures and wine profiles play off one another. It feels less like a restaurant booking than a private gathering hosted by people who know the cellar intimately.
What to expect
Expect a candlelit, enclosed room, a table set for a single party, and a menu built around the wines rather than the other way around. Because the space is reserved for private use, the occasion is entirely yours, which makes it a favourite for anniversaries, small celebrations and serious collectors visiting the destination. Arrangements are made directly with the resort’s dining team, who can tailor the evening to the group.
