Agave Study at Peacock Alley
Guided evening tastings of tequila and mezcal paired with local bites, inside Pedregal's clifftop resort.
Waldorf Astoria Los Cabos Pedregal sits on the cliffs above Cabo San Lucas, and its Agave Study at Peacock Alley is one of the most serious places in the region to explore Mexico’s native spirits. The open-air, cliffside room looks out across the Pacific toward the Sea of Cortez, and in season guests may spot whales from their seats.
The collection runs to more than one hundred carefully chosen labels, and its breadth is the reason it belongs on this list. Tequila and mezcal are joined by raicilla, bacanora and sotol, with bottles ranging from clay-pot mezcal to blends made from wild agave. The emphasis is on provenance: where each spirit comes from, how it is made and the traditions and landscapes behind it.
Tastings are led by the resort’s experts and paired with local foods, turning a drink into a short lesson in Mexican culture, from Jalisco to Oaxaca.
What to expect
Guided tastings include a broad Agave Experience suited to both newcomers and enthusiasts, Mezcaleando with expressions from Oaxaca, Tequileando, which swaps the usual lime and salt for cinnamon and orange, a flight dedicated to Clase Azul and an ultra-premium Once in a Lifetime tasting paired with artisanal cheeses, flavoured salts, seasonal fruit and chocolate. In the evening, the space works as a refined bar for a cocktail or a neat pour with the sunset. Tasting selections are subject to availability, so ask the team what is pouring.
